Winemaking
The winemaking process preserves freshness and aromas. Grapes are harvested early in the morning, when temperatures are low. They undergo a cold soak to extract the typical aromas of each variety. Gentle pneumatic pressing preserves the quality of the crop. The deposit from the must is filtered and added to the pressed juice in order to enhance primary aromas – a technique mainly used in Gascony. Slow alcoholic fermentation, at low temperatures in tanks, followed by four months ageing on fine lees before bottling.
