Winemaking
The first step in crafting this Chardonnay is picking the grapes at perfect maturity to create a rich white wine. Gentle pressing in a pneumatic press allows the extraction of premium juices only. Fermentation in temperature-controlled (16/18°C) stainless steel vats. Malolactic fermentation is halted in order to preserve the wine’s natural freshness. It is then aged on its fine lees for 5 months with regular stirring before bottling.
