Winemaking
Harvested in early September at high sugar concentration, with yields limited to 50 hl/ha. Grapes are crushed, briefly macerated and pressed; juice decants naturally before fermentation in stainless steel and oak. Only the oak-vinified half undergoes malolactic fermentation. After eight months on fine lees, the final blend is lightly filtered and bottled.
