Winemaking
The grapes are harvested and crushed at the beginning of October. Maceration and fermentation last for 7/8 days in horizontal vats at a controlled temperature. Malolatic fermentation and fining both take place in new French oak barriques and last for 20/22 months. During this time the wine is racked few times for clarification. The wine spends 3 months in stainless steel vats before bottling, without being fined or filtered. After 12 months in bottle the wine is released.

Consume with hearty dishes - particularly those that are very rich, where this wines strong structure and good acidity will help to keep the palate lifted. Game or rare beef with blue cheese would be ideal.
