Winemaking
Fermented in large-format concrete with 10% whole bunches, using ambient yeasts over 18 days. It was then pressed into French oak barriques (20% new) for indigenous malolactic fermentation. Aged 14 months, with one racking, before bottling unfined and unfiltered.
