Intense yet restrained lemon and honey notes on the nose, with similarly understated character on in the mouth. This is long, lean and extremely classy - doesn't give away all it has to offer straight away, but instead rewards being savoured slowly. A superb white Burgundy from one of the Côte de Beaune's less famous villages.

Winemaking
Initial pressing is very slow so as to respect fruit. Juices from the very last pressings are not retained. No yeasts or enzymes are used for fermentation. The wine goes directly into barrels after "débourbage" (decanting of white wine to reduce sediment). Then the wine is aged in barrels (25% in new oak) for 12 months.
