Winemaking
We make the wine using state-of-the-art technologies (pneumatic press, temperature control), whilst respecting our traditions and our terroir. Throughout winter, the Muscadet is kept on its “lies fines”; month after month, the complexity of the aromas develops, and the structure gets more complex. Progressively, the yeast autolysis takes place, releasing the amino-acids and enhancing the palette of flavours evocative of brioche bread and dried fruits.
