Beautiful bottle aged Muscadet, made from 55 year old vines and benefitting from extended underground cellaring on its lees. It's then bottled without fining or filtration, resulting in a complex rich and mineral style. Given it's age this stunning wine is still beautifully clear and bright - and has a wonderful bouquet of white flowers, citrus fruits, pear and a mineral edge. It's bone-dry and zesty with plenty of fruit on the palate and a brisk, fresh finish. The ultimate seafood wine - serve chilled with oysters, mussels or barbecued prawns. Also has the weight to partner lobster.
Winemaking
Grapes are double sorted in the vineyard and winery before being whole bunch pressed using a pneumatic press. Wild yeasts were used for fermentation which lasted for 20 days at 18°C in large cement tanks. After fermentation the wine is aged on its fine lees for a minimum of 4 years with no racking or battonage. The wine is bottled without any fining or filtering, making it suitable for vegetaran and vegan consumption. Residual sugar 2.5g/l, acidity 4.4g/l, pH3.3.
