Winemaking
In the Estate winery, the best, most updated technologic resources have been used to develop the winemaking, according to the most traditional criteria. This guarantees a control of all processes, avoiding over-extraction of the grapes and revealing their natural virtues. The alcoholic fermentation is done in small vats by macerating from 18 to 20 days and at a controlled temperature between 24-28 °C. Then, the wine is transferred to 40% new and 60% second year French oak barrels to undertake the malolactic fermentation and it is aging for 14 months.
