Winemaking
The grapes are received in small containers and a selection of bunches is made. After destemming a pre-fermentative cold maceration is carried out for 48-72 hours, alcoholic fermentation at a controlled temperature of 25º C in cement vats of 9000 Lts for 15 days with periodic pumpovers. Malolactic fermentation and subsequent aging in new French and American oak barrels for a period of 12 months which is then bottled and aged for a further 6 months before being released to market.
