Winemaking
Handpicked grapes, mostly destemmed, 15% reserved for whole bunch fermentation. Four-day cold soak at 4°C for color extraction, followed by 8-day fermentation at 25-30°C with gentle punch downs. Pressed off skins, 30% into old French oak for malolactic fermentation, softening acidity and tannins. Aged 9 months in old oak barrels, filtered, and bottled.
