This handcrafted English dessert wine blends the methods of ice wine production with a late harvest style wine. The Bacchus grapes were hand picked as wholes bunches and frozen to -10◦C for seven days, allowing the wine to achieve an exceptional level of natural sweetness. Whilst still frozen, the grapes were slowly pressed in our Coquard press for 24 hours, leaving most of the water behind as ice. The result was a must with naturally high sugar content. This must then went through a long cool fermentation for 3 weeks. The high sugar content causes the fermentation to cease early, producing an ABV of just 8.5%.
