" Once again, a small amount of the wine was fermented in old oak, and with five years on lees, this is a sensational treat. With 3 g/L dosage, it is racy and firm when you eventually reach the finish, but there is so much theatre to enjoy on the nose and palate it is incredible. This 2014 vintage is the current release, and there is no substitute for adding bottle age to lees ageing. There must be a mathematical equation where the answer is eight because I often find that HV wines move to a completely different level of sophistication at this age. And forgive me for repeating myself, but this wine only costs forty quid, which ought to make it a go-to sparkler in every serious Blanc de Blanc collection in the land. " This is a vibrant and beautifully crafted blanc de blancs. Aromas of lemon, pear and green apple float from the glass, followed by more delicate floral notes. There’s a backbone of biscuit and cream. Mouthwatering acidity rushes across the tongue at first sip, hitting the back of the mouth and taking the citrus and orchard fruit notes along for the ride. Textural with length, depth and a slightly saline, yeasty finish, this is an elegant and versatile food wine. "
Winemaking
At Hattingley Valley we use the traditional method for making wines. The best of our Chardonnay parcels were gently pressed as whole bunches in our Coquard press, which gives us a very clean and soft Cuvée juice with fewer phenolics. Approximately 10% of the wine was fermented in old Burgundy barrels and no malolactic fermentation took place to ensure that the zesty acidity shines through. The wine spent eight months in tank and barrel before undergoing secondary fermentation in the bottle, and four years ageing on its lees in order to soften the acidity and gain critical lees-aged character. At least 5 months on cork before release.
