Winemaking
Hand-harvested late September to mid October, whole-bunch pressed and settled for 12-24 hours. Fermented for 10 days at 18-20°C in stainless steel with sparkling yeast. A small portion of barrel-fermented red wine was blended before secondary fermentation. Bottled June 2020, then aged 36 months on lees before disgorging.
