Winemaking
Once tirage is finished, the bottles are sealed with natural cork stoppers and are placed on a rack to allow the natural ageing process to run its course. After approximately 24 months, autolysis begins and breaks up the yeast cells producing amino acids and releasing protein and carbohydrates into the wine.
