Winemaking
Sauvignon Blanc grapes from the village of Bue are pressed as soon as they are picked. The juice is then allowed to settle, ahead of the alcoholic fermentation which is temperature controlled. The fermentation takes place between 14°C to 17°C. Low temperature fermentation means a longer fermentation is possible which allows a gentler extraction of primary fruit, which is preserved and defines the character of the wine.
