Delightfully complex with notes of vanilla and sweet fruits on the nose. To taste, it's pleasantly woody with accents of spice, smoke, and nutmeg. The flavours finish with lingering nutmeg and charred oak.
Process
Elijah Craig's mash bill has a high corn proportion, (at about 78%) alongside rye and malted barley. Once distilled it's filled into new oak barrels that are fired for 40 seconds to achieve a Level 3 char and aged between eight and 12 years.
People
Reverend Elijah Craig was a Baptist preacher and entrepreneur who built paper and wool mills in Georgetown, Kentucky. Today it's distilled at Heaven Hill Distillery in Bardstown, Ky., the largest family-owned-and-operated distillery in the country.
Place
In 1789, Elijah Craig was one of the first distillers to age his whiskey in new charred oak barrels, with many crediting him and his Bourbon as one of the founding fathers of the category. Kentucky Bourbon was clearly influenced by his process.
