Immediately evocative of Burgundy in both appearance and aroma: transparent red, with a lilting perfume of strawberries, tilled soil, pot pourri, cherry pie, Turkish delight and just a hint of hot Tarmac after a summer rain shower. In the mouth, it's much bigger and more powerful than either the nose or appearance suggest. Big, chewy tannins, and flavours of white chocolate, leather, university library and new oak. Fabulous potential, but demands time in which to achieve it.

This certified organic wine exhibits wild berry, rose, dried lilac and an earthy touch of white truffle. However, the floral aromas and the lifted fruit are the protagonists in this balanced expression. Drink 2025-2050. "
Winemaking
Fermentation took place at the Barolo wineries, using stainless steel tanks kept at a controlled temperature (28-29 C) and following frequent pumping over stages. The wine stays in wood for two years, 80% in cask (2000 Lt) 20% in barrique (250 L). One cask is one year old, while one cask is four year old. One new barrique and the others of second passage. The wine spends one more year in bottle before release.
