Immediately evocative of Burgundy in both appearance and aroma: transparent red, with a lilting perfume of strawberries, tilled soil, pot pourri, cherry pie, Turkish delight and just a hint of hot Tarmac after a summer rain shower. In the mouth, it's much bigger and more powerful than either the nose or appearance suggest. Big, chewy tannins, and flavours of white chocolate, leather, university library and new oak. Fabulous potential, but demands time in which to achieve it.

Winemaking
Fermentation in stainless steel tanks, maintained at controlled temperatures (28-29°C), with regular pump-overs. The wine matures in wood for two years. This includes a mix of casks aged one and four years, and one new barrique alongside others in their second passage. Following this, the wine spends an additional year in the bottle before release.
