Finished in Oloroso casks, this stunning extra añejo is exceptionally rich with fruit notes of dried black cherries and apricots. Velvety, rich and incredibly complex, the Imperial is truly outstanding and is best enjoyed neat.
Process
Highland agave is cooked then fermented with proprietary yeast for up to 96h in an open tank. Two types of still are used (80% Copper Pot / 20% Coffey) and the spirit is aged for 5yrs in French Limousin before a finish in ex Oloroso Sherry casks.
People
Don Fulano is a product of the Fonseca family whose story begins in the Highlands of Jalisco over 140 years ago. Today they are both respected agave farmers and also run La Tequileña, one of the highest rated tequila distilleries.
Place
The family started planting agave in the late 1800s to supply the first tequila distillers that established in the region. In the 1980's they bought La Tequileña distillery (NOM 1146) in the heart of Tequila and became distillers as well.
