Winemaking
They are then carefully selected before being gently pressed. Domaine Vauroux uses some skin contact before fermentation to add more aromatic character. The juice is then fermented in stainless steel temperature controlled tanks at approx. 18 degrees. Olivier Tricon the winemaker is not an advocate of wood ageing but allows the wine an extended stay in tank before bottling.
