This is a beautifully rich, yet pure and fresh Viognier, with gorgeous honeysuckle and fresh peach aromas, leading to deep, succulent flavours of semi-dried apricots and honey, with a hint of crystallised ginger. The Sabon family has established a reputation as one of the finest producers of Chateauneuf du Pape. Winemaking
Harvest is by hand and the grapes are transported in small wooden crates in order to reduce bruising. After de-stemming they are gently crushed in a pneumatic press and fermented at a cool, controlled temperature in stainless steel. Ageing is in barrels for 6 months, 25% of which are new, and batonnage is performed regularly. Only 5000 bottles made annually.
