This intense blue inland sea extends over 20 km from Balaruc to Marseillan, passing through Mèze and Sète, and is the largest and deepest of the Languedoc lakes. The vineyard enjoys a Mediterranean climate with a prominent northerly wind, which helps maintain vineyard health and enables perfect ripening. A blend of Picpoul and Sauvignon. The Picpoul offers fruit and mineral complexity backed up with fresh gooseberry from the Sauvignon.

Vinification : Early maturity in order to keep freshness ; night harvest each grapes separately ; total destemming of the grapes ; direct pressing (pneumatic), protection of the must with CO2 and cold settling (4 to 6°C) ; cold temperature for fermentation (12-15°C). Early bottling.
