Lime and gooseberry leap on the nose with the crisp Sauv Blanc profile instantly recognisable. The wine mimicry continues to taste, and the gin (juniper and pepper in particular) gives it depth. Add to soda with some apple for a summery Spritz.
Process
New Zealand Sauvignon Blanc wine is vacuum distilled to preserve the passionfruit, lime, and green apple flavours. The distillate is then blended with the distillery's Dry Gin.
People
Dancing Sands was founded by Ben & Sarah Bonoma in 2016. Ben, an American, and Sarah, a Brit, moved to NZ to start a new life together. After seeing a still for sale, they jumped at the chance to leave their corporate careers and pursue their dream.
Place
Dancing Sands is based in Golden Bay, New Zealand. They are located near to the famous Te Waikoropupu Springs, which are reputed to be the clearest ever recorded in the world and whose pristine nature inspires their gins.
