Winemaking
The grapes are harvested by hand; fermentation and maceration take place in temperature controlled stainless steel tanks, which lasts about 3 weeks depending on the vintage. During the period of fermentation, the wines in the tank are pumped over the cap twice per day. The wine then sees 20 months of ageing after malo-lactic fermentation, in barriques from the Tronçais forests of France. During the ageing period, the wines are racked every 3 months to remove sediments. Once barrel ageing is complete, the wines are fined with egg whites in the traditional manner before bottling.
