Winemaking
Hand-picking combined with a lengthy whole-bunch press cycle (9 hours) wherein gentle skin contact encourages phenolic body. Cold fermented on solids in a temperature controlled inox fermenter using a combination of indiginous and selected yeasts to develop and protect delicate aromas. The ferment is chilled prior to sugar dryness in order to maintain a small (4.4g/L) amount of residual grape sugar. As a stylistic choice, no fining is used throughout the winemaking process and only minimal SO2 is added prior to bottling.

The purity and acidity in this wine would pair well with salads including fresh fennel or raw courgette. Seafood stir fries would also be a perfect accompaniment.
