Winemaking
Vinified with no added yeast, using a long, temperature-controlled fermentation with native yeasts and spontaneous malolactic fermentation. Aged on fine lees in stainless steel for at least 6 months with minimal intervention. Cold-stabilized, fined with bentonite if needed, then lightly filtered before bottling.
