Winemaking
The grapes are pneumaticaly pressed, very gently, and left to cold macerate for 48 hours at 10 - 12 degrees C. The juice is then racked off the skins and clarified before a slow fermentation at 18 degrees C in "cuves closes". This sealed environment forces some of the carbon dioxide (a natural by product of the alcoholic fermentation) to become trapped in the wine, creating the lightly sparkling character..
