An AWESOME wine, this displays a thrilling combination of violet, black pepper and star anise aromas, with complex layers of black cherry coulis, leather and liquorice. The maturation in large clay 'tinajas' gives fabulously supple, silky texture without obscuring Graciano's highly distinctive, soaring bright fruit and spice flavours. Long, spicy finish. This is such an exciting wine, and we enthusiastically endorse it.

Winemaking
As with all the wines of Ulterior, they are hand picked and made using various ancient techniques. This such example combines hand-picked fruit, destemmed, crushed and fermented in stainless still tanks. Tranferred to old barrels for malolactic fermentation. Aged 8 months in clay tanks. 10% of the wine ages in new French barrels and 90 % in clay tanks for 8 months. Minimum 12 months in bottle. Just 9000 bottles are produced and as with all his wines, their is no clarification or filtration to yield as much character as possible. Suplhur additions are also minimal with just a touch being added at bottling to ensure the wines reach thier destination in tact! This wine recently made history by being the highest ever scoring wine from La Mancha at the DWWA and only the second Graciano in history to be awarded a gold medal.
