Crafted in the way that Spanish wines were historically, before the French got involved in the 19th Century. Fermented from 50% destemmed fruit and 50% whole bunches. The wine is aged underground for 12 months in 4,500-litre clay jars called tinajas.

The very pale 2018 Ulterior - Parcela 6 Garnacha could be disguised as a rosé, save for its decadent nose of underbrush and cured meat reminiscent of some Châteauneuf du Pape. It has an evolved color and nose and tasty, almost salty flavors with fully resolved tannins. They did minimal extraction, fermented with 50% full clusters and aged the wine in 4,500-liter clay tinajas for 14 months. Very unusual, characterful and different, perhaps a bit extreme for some people. Drink 2022-2025.
