Crafted in the way that Spanish wines were historically, before the French got involved in the 19th Century. Fermented from 50% destemmed fruit and 50% whole bunches. The wine is aged underground for 12 months in 4,500-litre clay jars called tinajas.

96/100 - Pale in colour yet concentrated with bright and lively fruit, this is a fantastic expression of Garnacha from Central Spain. Brown sugar and strawberry jam combine with clove and wild herbs as well as a touch of tobacco leaf. Chalky tannins and bright acidity give energy and lift. It finishes with a touch of Christmas spice and speaks to the variety when well-managed from warmer climbs. 2025-28

17/20 - Tasted blind. Very pale garnet. Nose with lots of dried flowers, thyme and maraschino cherries. On the palate it is super-delicate, subtle, smooth, with very mellow tannins and an aerial character. It finishes with a touch of fresh cherry that lifts it up. Deep and full of aroma. The most aerial and refined version of Castilla-La Mancha. 100% Garnacha. 40% whole bunch. It was pressed when it reached 8% alcohol and finished the alcoholic fermentation in tinajas, where it also rested for a year.
