Pale golden colour. Complex aromas of cooking apple combined with toasted nuts and oatmeal biscuits, with a slight waxy character. Good, rich, rounded character in the mouth, with more of that apple fruit character and an impression of blanched almonds, all held together well by finely-balanced acidity. This is reminiscent of Vintage Champagne (without the bubbles) with a touch of Manzanilla. Superb, complex and fascinating wine.

Winemaking
As with all the wines of Ulterior, they are hand picked and made using various ancient techniques. This such example combines Albillo Real with a touch of Albillo Mayor (the only wine of this blend in all of Spain). The majority of the wine is aged in Tinajas with a percentage going to 600L old oak barrels where it is aged for 12 months. Just 9000 bottles are produced and as with all his wines, their is no clarification or filtration to yield as much character as possible. Suplhur additions are also minimal with just a touch being added at bottling to ensure the wines reach thier destination in tact!
