Made by rising star winemaker, Elias López Montero, whose grandparents recognised this parcel of vines as their best plot of Airén, this is from ungrafted vines - i.e., grown on their own roots. Winemaking
The must is extracted by decantation. and then fermentation takes place at 16 ºC for 10 days. Using an artisanal approach the wine is settled for natural clarification. Aging with the lees for 4 months in clay vats (terracotta amphorae) and then 4 months in stainless steel tank.
