Winemaking
The grapes are harvested approximately a month after the beginning of the harvest looking for concentration, passerillage and development of the noble rot. It is then hand-harvested and through organoleptic analysis. Maceration in the press for 12h. Pressing at 1.8-2 kg pressure. Alcoholic fermentation at 16-18ºC. Transfers and rest in stainless steel for at least 2 years. Proteic and tartaric stabilizations. Filtering and bottling.
