" The old Oloroso from the medium range is the NV Oloroso 1/14, sourced from a solera from Pedro Romero, possibly 35 to 40 years of average age and whose origin is Sanlúcar, as Pedro Romero used to buy wine from different suppliers in the village. Ex-Pedro Romero workers have explained that this was fortified to 17% and put through a long aging that concentrated the wine and increased the alcohol, while at the same time keeping the elegance and sharpness of the Sanlúcar wines. This is excellent. "
Winemaking
Made from 100% Palomino grapes, grown in the Jerez Superior region. This is bottled from the 1/14 solera, established and maintained by Pedro Romero, and rescued from ignominy by the Asencio family. Aged in old American oak barrels of 600 litres capacity, this was originally fortified to around 17% alcohol, but has increased in strength to more than 20% following 35-40 years' barrel ageing.
