d all broken glass. In addition all empty bottles from the adjoined hotel and restaurant are recycled. Improve efficiency of operations to minimize water and raw material use, energy consumption, waste and pollution generation. In particular to:
Work with our glass supplier to increase the level of recycled glass used in the production of the bottles. Replace high weight bottles (575g.) with lighter bottles (450 g.).This change had already took place for all our DOC wine production. Repl
ace where possible light bulbs with low energy use bulbs. Work with our carton supplier to increase the level of recycled paper used in the production of those cartons. Create awareness among our staff and suppliers of the potential environmental
effect of operations with which they are involved. Continue to conduct regular assessments of the environmental effects of our wine production to identify potential areas for improvement, and to follow through with programs to achieve these improvem
ents.
Winemaking
Origin:blend of 3 vineyards of property in the communes of Serralunga d'Alba,La Morra and Verduno. Grape variety: 100% Nebbiolo Harvest time: end of Septembre / middle October Fermentation: 15 days at 27°C in stainless steel vats with control of temperature and with 4 gently pumpings over per day
