The base spirit of peas is clear to taste, adding a backdrop of floral sweetness. The use of lemongrass and Makrut Lime Leaf both add a citrus edge. Light on juniper overall, and one to garnish with a sliver of Ginger in a G&T.
Process
Turning peas into alcohol is no different than any other raw material - but by using peas, it reduces carbon emissions through avoidance of fertiliser application as well as the dependency on imported animal feed protein sources.
People
Brothers Iain, John and David Stirling grew up on the family farm in Arbikie, Scotland. After years in the drinks trade, ventured home to set up a distillery. They recruited hotshot distiller Kirsty Black out of Heriot-Watt and set to work quickly.
Place
Arbikie Distillery was home to a distillery in the 1700s, so the team sought to embody the ways in which people worked back then using local ingredients. Love of the land also led to them creating the world’s first carbon negative gin. Impressive!
