This remarkable style, born on the Niagara Peninsula between Lake Ontario and Lake Erie and based on the toughest grape harvest on Earth (late December, -10°C), has been moulded by generations of growers into a perfect combination of luscious sweetness, biting acidity and dazzling purity of fruit. 'Nectar' is the tasting note that springs most readily to mind here.
