Winemaking
Fermentation 17ºC and racked to tinajas (clay tanks). No stabilisation and very open filtration. Cold maceration of Albillo for 10 days. Fermented with natural yeast. 17% of Moravia is added to complete the fermentation and remain on the skins for the next 2 months. Racking and bottling without clarification and needer filtration.
