Winemaking
The grapes are hand harvested bunch by bunch to ensure only the best fruit is selected. All the fruit is destemmed followed by fermentation and maceration in small concrete tanks for 25 days at around 23-25ºC. Fermentation is followed by a gentle pneumatic pressing and a natural malolactic fermentation. The wine is aged for 15 months in a mix of French and American oak barrels being filtered and bottled.
