Winemaking
Crafted from low-yielding, highly concentrated old-vine fruit, the small grape batches are fermented in five-tonne headed-down open fermenters, foot-trodden two-thirds of the way through the process, and basket-pressed into a mix of new and used French oak barriques where the wine matures on its lees for 18 months without racking, fining, or filtration.
