An ethereally graceful wine from a less well-known Burgundy village, this offers beguiling notes of wild cherry, sloe, rosehip, damson, walnut and marzipan. The supple-textured palate is supremely elegant, beautifully-balanced and long. There is absolutely nothing to prevent this being enjoyed straight away, but if you feel like stocking up, it could theoretically yield fabulous pleasure over the next 7+ years. It's so delicious that we somehow doubt that any bottles will survive that long unbroached, however. Lès is an archaic French preposition meaning 'close to' - hence Savigny-lès-Beaune is the village of Savigny, near the town of Beaune.

Winemaking
Care and attention go into every stage of this wine’s creation. Hand-harvested in small crates to preserve fruit integrity, it undergoes 2–3 weeks of maceration and vinification with indigenous yeasts. Gentle pigeage and remontage are used, with only free-run juice kept. Aged 12–15 months in oak (10% new).
