Winemaking
Exclusively estate-grown fruit, from vineyards moderated by extreme proximity to the Mediterranean. 25 year-old vines planted on schist and clay soils. Hand-harvested and direct pressed. Natural yeast are used for fermentation, and this, together with malolactic conversion, takes place in stainless steel vats.
