Winemaking
After destemming and crushing, grapes ferment and macerate for 12–14 days in stainless steel at 25-28°C with frequent pump-overs to extract Carignano’s tannins. After malolactic fermentation, the wine matures 10–12 months in first- and second-use French oak, then several months in bottle to refine aroma, flavour and bouquet.
