Winemaking

Double selection of the grape was made: of clusters and berries. Working with gravity and vinification by plots that respects the raw material. Spontaneous fermentations, gentle and very controlled extractions in French oak vats and concrete tanks. Aged for sixteen months in French oak barrels of different sizes.
