Winemaking
Grapes are selected at peak ripeness, crushed and gently pressed in a pneumatic press. Vinified in a dry style using stainless steel tanks and old large oak casks; no malolactic fermentation or extended lees aging, in order to preserve freshness, vivacity, and fruit aromas. Bottled in the spring, followed by one year of aging in our cellars.
