Winemaking
Harvested in two ripeness picks, the destemmed Meunier and Pinot Noir (25% whole bunch) underwent a 3-day cold soak, 7-day wild ferment, and basket pressing. It then spent 5 months aging on fine lees in seasoned French oak puncheons prior to bottling.
