Preparation of the base wine: Final selection of the clusters; Direct pressing in inert atmosphere; Clarification of the must; Inoculation of selected Saccharomyces cerevisiae yeasts; Alcoholic fermentation with controlled temperature (15° to 16°C); Assemblage (blend of Chardonnay, Pinot Noir and Riesling Italico wines); Tartaric stabilisation and filtration. Foaming (Charmat method): Selected yeasts; Second alcoholic fermentation inside high pressure tanks at a temperature of 12°C; Maturation for 6 months with yeast autolysis; Filtration and addition of expedition liquor, Bottling and labelling.
