Winemaking
Fruit was picked early to preserve freshness, then gently pressed without crushing and settled overnight. It was racked with light lees to 40% neutral barriques and 60% tank for wild fermentation. The barrique portion aged on lees for three months, completed malolactic fermentation, then was blended, filtered and bottled.
