Winemaking
Certified organic grapes were machine-harvested, destemmed and fermented in small open-top fermenters using Rubino yeast. Caps were plunged and pumped over twice daily. After 23 days, the wine was pressed into stainless steel tanks and neutral oak barrels, underwent natural malolactic fermentation and aged 10 months before blending, filtering and bottling.
