Hand-harvested grapes are carefully selected and destemmed before fermentation in temperature-controlled stainless steel tanks with around two weeks of skin maceration to extract colour, aroma and fine tannins. The wine is matured in stainless steel, preserving the purity, freshness and distinctive character of this rare indigenous variety.
